I just saw a nice looking recipe for vegan sausage DIY Homemade Beyond Sausage Recipe in r/foodhacks LINK but I have IBS/Celiac and I am wondering if there is a low fiber alternative to TVP. I used to use crushed chickpeas or crumbled tofu in place of TVP but both have too much fiber for how I have to eat now. Beans and most vegetables are out. The recipe already has beets and oats in it. Could I use feta cheese mixed with egg or something as the bulk/protein in a sausage do you think? Do any of you have a low-fiber substitute for TVP/tofu?
