Oregano is a very potent herb. 1/4tsp in one gallon of chili is plenty. That will create a soft herbal background note that is easy to taste and doesn't overpower the chili. I often see recipes with a TBSP of oregano for less than a gallon of chili. Sadly the same recipes often only include 2 TBSP of generic chili powder.
Pro chili recipe tip: take it easy on the oregano and use more chiles!
