INGREDIENTS:
1/2 lb. ground chuck
1/2 lb. ground bacon
2 c. milk (I used skim, but any brand will do)
1 c. water
2 c. heavy cream
1 tsp. salt
3 c. peanut butter (unsalted)
1 can (7 oz.) cream cheese
1 1/2 lbs. ground white meat chicken (1 lb. of poultry would work also)
Directions:
-
Place the ground meat in a large bowl with 3 cups warm water and let sit until the meat is fully submerged.
-
In a large pot bring 4 c. water to a boil. Add the ground meat and cook for 30 min. until the meat is completely cooked (about 2 hr.)
-
Remove the meat from the water and rinse with cold water. Let the meat sit until cool enough to handle (about 30 minutes).
-
Place the meat back in the pot and combine with the remaining ingredients. Cook over medium heat until thoroughly coated.
-
Remove the meat from the soup and strain. Add the cheese and cream cheese to the soup and stir until the cheese is melted. Pour into bowls (I used a large cookie sheet for this step).
-
Serve with a slice of peanut butter for dipping.
bon appetit
