Random Recipes - Don't know what's for dinner tonight? Use my random recipes generator!

Hi everyone,

I started working on a little website a while ago where people can share recipes with each other. There are already very big sites out there that do this but I thought they lacked a 'random recipes' feature.

On my website it is for example possible to select dietary requirements and find just recipes that fit selected criteria. An example of criteria you could potentially use: low carb diabetic friendly kosher food with beans as a main ingredient but which is nice to eat for brunch. This would return one single random recipe fitting those criteria :). You can also look for cuisines, courses, occasions and much more!

Keep in mind that it's still very new, there are just a few recipes (10ish) and there are still a lot of bugs here and there. It would be awesome if you could help me add some recipes!

Shakshuka - Eggs poached in tomato sauce

INGREDIENTS

½ teaspoon cumin seeds

1 tablespoon olive oil

1 medium onion, sliced

1 garlic clove, minced

1 medium or 2 small tomatoes, chopped + tomato paste (optional)

1 chilli (or not) pepper or 1 small bell pepper, chopped

½ teaspoon sugar (optional)

Cayenne pepper

Salt & pepper

3 eggs

Parsley

INSTRUCTIONS

Roast cumin seeds in a dry pan on high heat

Add oil, onions, garlic and sauté until transparent (4-5 minutes)

Add tomatoes, tomato paste (if using), peppers, spices and cook on medium to high heat for around 10 minutes

Reduce heat to medium and make 3 holes (wells)

Break the eggs in the holes and cover

Cook until egg whites are just set

Top with parsley and more salt & pepper if you like!

Tzatziki - made with Greek Yogurt

When making Tzatziki, follow this recipe once and it will become automatic. With just ingredients as thick tangy yogurt; sweet, crisp cucumber; pungent dill and savory garlic with tart lemon. The end result, an addition to dozens of dishes you can serve daily, almost as familiar as ketchup and salsa, but much healthier! Some things to keep in mind to make your Tzatziki worth tripping over. Firstly, try salting your cucumbers. I would use baby cucumbers because they are small and make for smaller slices. Try removing the seeds and salting them a half hour before putting the dip together. Nothing is worse than watery Tzatziki and the one way to avoid that is strain the yogurt. Use a brand new and unused j-cloth, dump the Greek Yogurt in the j-cloth and let drain for about 60 minutes. Squeeze out any excess water once the 60 minutes is up. Now on to the ingredients and prep:

Ingredients: 1 pound of cucumbers with the ends removed and then sliced lengthwise (equivalent to 6 baby cucumbers) 2 cups of strained Greek yogurt (a brand new and unused j-cloth works best for straining yogurt, 60 minutes) 4 cloves of garlic, finely minced A large handful of dill, minced The juice of one lemon

Procedures: 1) With a teaspoon, start by scooping out the seeds of the cucumbers. What you are left with is a half-moon shaped-cucumber. Then, slice them thin, but not too thin; they need to have some crunch. 2) Then add the cucumbers to a large mixing bowl with the rest of the ingredients listed above. Taste for seasoning and acidity, then cover with tin foil or saran wrap and let it sit in your refrigerator for a couple of hours before serving.

Sauces for chicken breasts

Looking for sauces I can prepare ahead of time to eat with chicken and rice or potatoes. Right now I'm thinking a peanut satay sauce, some kind of marsala wine sauce or a chicken french type lemon/butter sauce.

Bacon Jalapeno Pimento Cheese Anyone???

The Best Pimento Cheese Ever!

3 Pickled Cherry Peppers aka Pimento (jar) 10-15 slices of pickled jalapeño peppers (can or jar) 4oz cream cheese (room temperature) 1 cup sharp cheddar cheese 1 cup medium cheddar cheese 1/2 cup mayo - I used Kraft Mayo made with Olive Oil 1/2 tsp cracked pepper blend 1/4 tsp onion powder 1 tsp worstershire sauce 5-10 dashes of Franks Red Hot Sauce 3 slices of thick cut bacon (if you can find jalapeño cured or peppered bacon then use that, if not just use your favorite) First things first. Get 4 slices of that delicious thick cut bacon cooked nice and crispy then crumble up 3 of those slices into tiny pieces and set aside. I say do this first, so it can cool off enough that it doesn't melt the cheese when added. Then promptly eat the fourth slice because bacon is delicious. So, I recently found out that pimento is just a fancy way of saying red ripe cherry peppers. To add a little more distinct pimento zing I decided to buy these whole in a jar and diced them up myself. You can find them at any grocery store that has pickles. I take about 3 whole peppers, rip the stem off and clean out the little seeds (under a running faucet works well). Then they need to be diced into small pieces. Tip: Lay the pepper skin side down for an easier cut. Set aside and grab your jar of pickled jalapeño peppers. You don't need many to add big flavor. Dice up about 10 or 15 of the slices. Make sure any seeds are out before you dice. Now that you have all your knife work finished, you can start to combine. Add all of the cheeses to a bowl, I like to have 2 types of cheddar for flavor complexity as well as two different grate settings for texture. Don't forget the cream cheese (make sure it is soft and at room temperature). Then add mayo and dry and wet seasonings. The Worcestershire sauce really pulls all the ingredients together so do not skip this ingredient. As for the Franks, season to taste. Once the ingredients are all in the bowl, just mix it up with a wooden spoon until you see a well distributed mixture and enjoy! We served ours up today with a simple thin sliced baguette drizzled with olive oil and baked until golden brown. Other favorites include serving with warm pita cut into triangles, as a simple pimento cheese sandwich, or even baked on pizza dough to make one of the best pizzas on earth.

Pixley On a Stick

Ingredients:

  • 1 pound sliced bacon

  • 5 pounds boneless skinless chicken breast halves, cut into 2-inch chunks

  • 60 wooden toothpicks

  • 1 cup white sugar

  • 1 (1 ounce) envelope ranch dressing mix

Preparation:

  • 1 (1 ounce) envelope ranch dressing mix

  • Mix together the sugar and ranch dressing mix in a shallow bowl.

  • Cut the bacon slices in half the short way. Wrap half a bacon slice around each chunk of chicken, and secure it with a toothpick. Roll the bacon-wrapped chicken pieces in the sugar-ranch dressing mixture.

  • Place the bacon wraps on the prepared baking sheets, and bake in the preheated oven for 30 minutes, until the chicken is cooked through, the bacon is sizzling, and the crust is browned.
