Shakshuka - Eggs poached in tomato sauce

This is my recipe for this amazing dish!

INGREDIENTS

½ teaspoon cumin seeds

1 tablespoon olive oil

1 medium onion, sliced

1 garlic clove, minced

1 medium or 2 small tomatoes, chopped + tomato paste (optional)

1 chilli (or not) pepper or 1 small bell pepper, chopped

½ teaspoon sugar (optional)

Cayenne pepper

Salt & pepper

3 eggs

Parsley

INSTRUCTIONS

Roast cumin seeds in a dry pan on high heat

Add oil, onions, garlic and sauté until transparent (4-5 minutes)

Add tomatoes, tomato paste (if using), peppers, spices and cook on medium to high heat for around 10 minutes

Reduce heat to medium and make 3 holes (wells)

Break the eggs in the holes and cover

Cook until egg whites are just set

Top with parsley and more salt & pepper if you like!
