How would you incorporate feta into a dessert?

Would it be possible to do a fetta tuille of some sort? I'm thinking of pairing the fetta with a beetroot & yoghurt dessert but I am coming short on ideas of using the fetta. I know it would work in an ice cream, but I already have an ice cream component in mind.

Anyone have any ideas?
