Fall is here & it has started getting cooler at night in our area, so my Mom & I decided to make chili. Since my husband hates beans, we created our own variation of a bean-less chili. It turned out good & he loved it, so I decided to share it with you all.
Ingredients
• 1 lb lean ground meat (We used beef, but turkey or chicken would work too)
• 1 small yellow onion
• 1 green bell pepper
• 1 packet taco seasoning
• 1 Tbsp cumin
• 2 Tbsp hot sauce, or less if you don't like it as spicy (we used Frank's RedHot Original)
• 1 can (14.5 oz) fire-roasted diced tomatoes
• 1 can (6 oz) tomato paste
• 1 can (14 oz) tomato sauce (we used one specifically made/seasoned for chili recipes)
• 3/4 - 1 cup water, depending on thickness preference
Directions
-
Brown up the lean ground meat, drain any fat/grease.
-
Chop onion and bell pepper to preferred sizes.
-
Place all ingredients, liquid from diced tomatoes included, into crockpot/slowcooker.
-
Cook on low 4 - 6 hours, or on high for less time if you prefer. The meat is already cooked, so this is basically to heat through & let all flavors blend.
-
Serve with shredded cheese & oyster crackers, if desired.
I'd say this probably serves 4 to 6 people, depending on appetites. We had my Mom, niece, husband, & I eat this still with some left over. Mom had gastric bypass last year & niece is only 8, so neither of them eat a whole lot.
bon appetit
