[Discussion] What is the correct way to double/triple a recipe?

I use a lot of online recipes and cook for more people than the recipes are usually intended for, so I'm always doubling a recipe and sometimes tripling, if needed, depending on how many guests are over. However, I always feel like the recipe is nowhere near as good as it should be when I do that. Am I not supposed to just multiply by 2 or 3? Am I doing something wrong?
