Stan's Honey Coriander Wings

Stan's Honey Coriander Wings

Dry Rub

1 Tbsp. kosher salt

1 Tbsp. paprika

1 Tbsp. granulated sugar

1 tsp black pepper

1/4 tsp turmeric

1/4 tsp ground cinnamon

1/4 tsp granulated garlic

1/8 tsp cayenne pepper

1 Tbsp. sesame seeds

2 pounds of chicken wings

Honey Coriander Sauce

1 Tbsp. chili powder

1/2 ground ginger

1 Tbsp. ground coriander, toasted

1 Tbsp. lime juice

1 cup honey

1/2 cup low sodium soy sauce

2 Tbsp. corn starch

1/4 cup water

  1. Combine salt, paprika, sugar, black, pepper, turmeric, cinnamon, garlic, and cayenne in a large mixing bowl (this is the wing seasoning)
  2. Add wings and mix thoroughly making sure all wings are evenly coated
  3. Let wings sit for an hour
  4. Preheat oven to 475
  5. Line cookie sheets with aluminum foil then parchment paper
  6. Spread wings evenly over both sheets
  7. Cook wings for 1 hour, flipping after 45 min. May take longer, you know they are done when they are brown with dark spots

  1. In the last 15 minutes start the sauce
  2. Combine lime, honey and soy sauce in a non-reactive pot and start heating
  3. Combine chili powder, ginger and toasted coriander in a small mixing bowl and sprinkle into the pot while whisking to avoid clumping. Bring to boil for 1 minute.
  4. Simmer for another minute
  5. Combine water and corn starch and add while simmering
  6. Whisk until slightly thickened
  7. Place wings in large mixing bowl but let as much fat drip off as possible
  8. Combine sauce and wings and toss until all wings are evenly coated, tossing in the sesame seeds
  9. Serve hot and enjoy!
