Buttermilk and an unconventional baking temperature/cooling method make this cake moist and delicious!
275° oven -- grease and flour a 9" x 13" pan
Ingredients
- 1.5 c mashed bananas
- 2 tsp lemon juice
- 3 c flour
- 1.5 tsp soda
- .25 tsp salt
- .75 c butter, soft
- 2 c sugar
- 3 eggs
- 2 tsp vanilla
- 1.5 c buttermilk
Frosting
- .5 c butter, soft
- 8 oz pkg. cream cheese, soft
- 1 tsp vanilla
- 3.5 c icing sugar
- Combine butter and cream cheese, then add vanilla and icing sugar.
Directions
- Mix bananas with lemon juice; set aside.
- Mix flour, soda, salt in one bowl.
- Cream .75 c butter and sugar in another bowl until fluffy.
- Add eggs to butter mixture, one at a time, then mix in 2 tsp. vanilla.
- Add flour mixture, alternating with buttermilk (half at at time).
- Add bananas.
- Pour into prepared pan. Bake 1 hour, or until inserted toothpick comes out clean.
- Place into freezer for 45 minutes.
- Frost when fully cooled.
