I’ve recently taken a job where I have the freedom to make whatever I want as long as it falls within the French realm of baking.
I’ve been in the artisan bread game for 7 years and the only sweets/desserts I’ve ever really made are cookies and shortbreads. Over the past few weeks I’ve made opera cakes, eclairs, mousses, and so much more on top of our daily production schedule of baguettes, croissants, and other pastries.
It seems with French baking the recipes are simple but the devil is in the details and techniques.
Anybody follow any good YouTube channels or blogs about French baking?
