I'm looking for saffron sauce recipes that aren't cream based.

Hi,

I am obsessed with saffron at the moment and as it is quite expensive, I want to use it in a way that makes it the star of the dish. I think a sauce is the way to go but everything I've found is really basic and heavy cream based. I'm not opposed to using cream but I'd prefer something incorporating butter or oil. Maybe some wine. Idk, what ya got?
