This is a great recipe for meal prepping. Here it is!
- 1 (16 oz) can Pinto beans
- 1 (16 oz) can Light red kidney beans
- 1 (16 oz) can Sweet corn
- 1 (11 oz) can Rotel tomatoes and chilies
- 1 (28 oz) can Diced tomatoes
- 1 (7 oz) can Diced green chiles
- 1 (1 oz) envelope of Hidden Valley Ranch seasoning mix
- 1 (1.25 oz) Ortega taco seasoning
- 1 lb. lean ground turkey
Directions: Cook ground turkey on stovetop with taco seasoning. Add all ingredients to the slow cooker and cook on low heat for 4 hours. I typically make mini jalapeño cornbread muffins to go with it.
The total cost of these ingredients came to $11.15, making the cost about $1.40 per serving (8 servings). I also created a nutrition breakdown for the soup.
