Redneck Joe's Peanut Butter Hamburger Soup

INGREDIENTS:

1/2 lb. ground chuck

1/2 lb. ground bacon

2 c. milk (I used skim, but any brand will do)

1 c. water

2 c. heavy cream

1 tsp. salt

3 c. peanut butter (unsalted)

1 can (7 oz.) cream cheese

1 1/2 lbs. ground white meat chicken (1 lb. of poultry would work also)

Directions:

  1. Place the ground meat in a large bowl with 3 cups warm water and let sit until the meat is fully submerged.

  2. In a large pot bring 4 c. water to a boil. Add the ground meat and cook for 30 min. until the meat is completely cooked (about 2 hr.)

  3. Remove the meat from the water and rinse with cold water. Let the meat sit until cool enough to handle (about 30 minutes).

  4. Place the meat back in the pot and combine with the remaining ingredients. Cook over medium heat until thoroughly coated.

  5. Remove the meat from the soup and strain. Add the cheese and cream cheese to the soup and stir until the cheese is melted. Pour into bowls (I used a large cookie sheet for this step).

  6. Serve with a slice of peanut butter for dipping.
