What to do with VERY dark chocolate?

After the holidays I was gifted a few bars of Ghiradelli and Lindt dark chocolate, all 90% cocoa and higher. Now I do enjoy dark chocolate, but anything higher than 75% is usually too bitter for me to eat as is, but I figured using it in something else would take care of that. Any ideas on what to make with it?
