Pad See Ew is a pork and seafood barbecue that is -- despite it's appearance -- both light and amazingly delicious. Give it a try.
Ingredients:

1 Tbsp. fish sauce

2 tablespoons oyster sauce

2 teaspoons light soy sauce

1 teaspoons sugar

2 teaspoons white vinegar

2 medium clove of garlic (peeled and minced)

8-12 ounces of sliced meat marinated in 2 teaspoons light soy sauce and a teaspoon of baking soda (I like to use pork and seafood. You can use whatever you have.)

16 ounces of fresh, flat and wide rice noodles

1-2 cups of something green: That is (in my choice anyway), Chinese broccoli or regular broccoli and occasionally some scallions

1/2 cup oil (I tend to like high temp oil)

1-2 large eggs

2 tablespoons of sweet dark soy sauce

Finely, a little thai chili sauce, just for fun
Directions:
Mix together the sauce, filled with fish sauce down to minced garlic and set aside.
Place the chicken in a small dish with soy sauce and light baking soda.
Put the rice noodles in warm water, allow to sit for a bit and then drain and set aside.
Give the greens a little splash in some boilg water. Just enough to get them softened and then drain and set aside.
The rest of this dish is assembling using a wok or at least a good high dutch oven.
Heat up the oil and get it going, then add in the egg, soy sauce and let that cook for a minute or two. The add the noodles, the marinade, the meat and last, the greens. Dizzle with a little soy sauce and you're ready to go.
