200g of dry pasta(just normal spaghetti or fettucine are the best) 3 eggs, thoroughly beaten 3 table spoons of grated Parmesan cheese. 50 g of chopped bacon(no it HAS to be pork, not turkey) Salt Pepper 2 tablespoons of Olive oil
- Beat in eggs and mix it with grated parmesan cheese.
- Boil pasta. Add 2 pinches of salt, and cook it til it's Al Dente.
-
Meanwhile, cook the bacon in other saucepan. Once the bacon fat renders, use kitchen towel to soak up excess oil so that the paste doesn't get too greasy. The pan should be greasy enough only to cover the pan, not flowing with oil.
-
When the pasta is cooked, drain. Do Not wash it in cold water. Throw it in the bacon pan, stir it in low heat until excess water evaporates away.
-
Add egg+cheese sauce, and stir it so that the noodles are completely covered by egg/cheese sauce. the heat should be a tad bit lower so that it doesn't scramble.
-
Add some pepper/salt to your taste.
bon appetit
