Fattoush (Lebanese Salad)

Ingredients

  • 2 heads of romaine, chopped
  • 1 red onion, julienned
  • 4 roma tomatoes, chopped
  • 1 red bell pepper, juilenned
  • 1 green bell pepper, julienned
  • 1 orange or yellow bell pepper (or both), julienned
  • 1 bunch of green onion, chopped
  • 1 cucumber, chopped
  • 1 tablespoon roasted pine nuts
  • 2 pita breads, toasted and broken into small pieces
  • 2 tablespoons crumbled feta cheese

Dressing

  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • salt and pepper
  • 2 garlic cloves, chopped well
  • 1 lime or lemon, juiced
  • 1/2 tsp cumin
  • 1 1/2 tablespoons za' atar

Making

  1. prepare everything to it's listed form (chopped, julienned, etc.) and add to a large bowl.
  2. toast pita, let cool, break apart.
  3. take dressing ingredients and combine them in a bowl mix well with fork or whisk or in a bottle and shake very well to combine.

you can also make this a meat salad by adding lamb or chicken to it.
