Ingredients
- 2 heads of romaine, chopped
- 1 red onion, julienned
- 4 roma tomatoes, chopped
- 1 red bell pepper, juilenned
- 1 green bell pepper, julienned
- 1 orange or yellow bell pepper (or both), julienned
- 1 bunch of green onion, chopped
- 1 cucumber, chopped
- 1 tablespoon roasted pine nuts
- 2 pita breads, toasted and broken into small pieces
- 2 tablespoons crumbled feta cheese
Dressing
- 1/2 cup olive oil
- 3 tablespoons balsamic vinegar
- salt and pepper
- 2 garlic cloves, chopped well
- 1 lime or lemon, juiced
- 1/2 tsp cumin
- 1 1/2 tablespoons za' atar
Making
- prepare everything to it's listed form (chopped, julienned, etc.) and add to a large bowl.
- toast pita, let cool, break apart.
- take dressing ingredients and combine them in a bowl mix well with fork or whisk or in a bottle and shake very well to combine.
you can also make this a meat salad by adding lamb or chicken to it.
