Fueled by my desire for the discontinued Penrose pickled sausage, I've decided to make my own! I had a jar of Miller's Hot Bologna and after I finished them I boiled the leftover brine, and put in some italian sausage. Bit into one today and the inside was still raw. I have a pack of Bratwurst that I was going to do next but Im not sure how to go about cooking them. Should I put them in the boiling brine for 10 minutes before transferring to the jar? Should I bake or pan cook them? Or should I be using a different type of sausage completely? Thanks for any information!
