Made this today and it was some of the nicest Pork I've ever made. It was so simple to do, thought I'd share it as barbecue season is almost upon us again
INGREDIENTS
2lb Pork Loin 100ml Vegetable Oil 1 tbsp dried rosemary 1 tbsp dried thyme 1 tsp finely chopped garlic

Add Oil, Herbs and garlic to a pestle and mortar and grind until combined.

Score fat on top of Pork then season with salt and pepper. Apply the oil mixture to the fat, massaging it into the scores

Place the Loin in a roast holder and roast it for about 90 minutes over a medium - high indirect heat until internal temp is about 72 degrees C.

Remove Loin from the roast holder and sear on all sides over the hot coals. Wrap in foil and allow to rest for 30 minutes before carving.
