This chicken and apricots dish is one of the things I like to make that sends the people around my house just a little crazy.
Ingredients

4 chicken legs and thighs

Olive oil

1 onion, cut into large slices

3-4 garlic pieces, sliced as thin as you can get them

4-6 carrots, sliced thin small rounds

1 to 1 1/2 cups chicken stock

2 tsp. cardamom

2 tsp. coriander
-
1 tsp. cloves (or two whole cloves)

2 tsp. smoked paprika

Half a dozen fresh apricots, cut with seeds removed
Directions
Using a large and deep flat-sided pan, coat the bottom with just enough olive oil to allow the chicken to fry. Add in the chicken pieces (using two batches if necessary) and brown them. Set them aside.
Add the onions and braise until nicely softened and then add the garlic for a few minutes and then the carrots for about five minutes.
Add the chicken back to the pan and just enough cooking stock to bring it up to just a little bit short of covering the chicken. Add in the spices and allow the meat and fish to cook, covered with a lid, for about an hour.
About 15 minutes before serving, add in the apricots and let it cook with the cover off.
