A quinoa base is delicious with this salad to make it more filling but totally optional. All ingredient quantities is optional based on what flavors you prefer but I usually just use the same amount of each ingredient.
Ingredients: - Cucumber - Avocado - Tomato - Sweet corn (I buy canned) - Black beans (also canned) - Chick peas (hodor) - Limes Directions: 1. Cube your cucumber, tomatoes, and avocados and put them in a large bowl 2. Rinse all of your canned ingredients and add them to the bowl 3. Mix up contents of the bowl and add your lime juice (I use about 5 fresh limes but feel free to keep adding until you reach the desired level of citrusy freshness)
