Low Fat, Full Flavor Chicken Tikka Masala

I have been making Chicken Tikka Masala for a long time and never dared to make a low fat one until now. This recipe is so delicious it is all I can do to stop myself from eating my next week's meal preps. I want to shout out from the roof tops that yes that low fat delicious Chicken Tikka Masala's exisist. That is how proud I am of this dish!

I hope you give this dish a chance, it is more work than usual requiring 30 minutes of prep time but so so worth it.

Recipe

Ingredients for Marinade:

  • 1 cup | Plain yogurt
  • 1 tablespoon | Grated ginger (micropane)
  • 1 tablespoon | Minced garlic
  • 1 tablespoon | Fresh lemon juice
  • 1 teaspoon | Salt
  • 1 teaspoon | Pepper

Ingredients for Sauce:

  • 3 lbs | Tomatoes
  • 2 whole | JalapeƱo peppers - chopped
  • 2 tablespoon | Tomato paste
  • 1 tablespoon | Grated ginger (micropane)
  • 1 tablespoon | Minced garlic
  • 1 teaspoon | Garam masala
  • 1 teaspoon | Paprika
  • ½ teaspoon | salt
  • 1 teaspoon | sugar

Directions:

  1. Take a medium sized bowl and combine 1 cup plain yogurt, 1 tbsp grated ginger (micropane), 1 tbsp minced garlic, 1 tbsp juice of fresh lemon, 1 tsp salt, 1 tsp pepper. Mix well.

  2. Chop the chicken into 2 inch by 2 inch pieces and mix into the yogurt marinade.

  3. In a dutch oven or pot with high sides, pour in 2 tablespoons of olive oil and 2 tablespoons of unsalted butter and wait for butter to melt before adding in garlic, ginger, peppers, garam masala, paprika.

  4. Saute for 5 minutes on high heat, stir constantly to keep from sticking to bottom of pan.

  5. Add in tomatoes and press down on tomatoes for another 5 minutes on high heat. Turn the flame down to low and let simmer for 10 minutes.

  6. If you have a hand blender, just blend directly in the pot. Otherwise wait 30 minutes for the sauce to cool before blending it.

  7. Grill chicken on the grill for extra flavor or just dump the marinated chicken along with the marinade into the pot and then let simmer on low for 40 minutes.
