Maple Walnut Overnight Oats

These oats are a great breakfast to make at night and grab and go in the morning. Hope you all enjoy!

For the oats

  • ¼ cup rolled oats
  • ¼ cup walnuts
  • 1 Tablespoon chia seed
  • ¼ cup plain Greek yogurt
  • ¼ cup – ½ cup of milk of choice (depending on how liquidy you like your oats)
  • 1 tsp pure maple syrup
  • Pinch of cinnamon

Optional Toppings

  • Extra whole walnuts
  • Maple syrup drizzle
  • Fresh blueberries or banana slices

Instructions

  1. Blend walnuts in food processor until it looks almost like small grains of sand (before it turns into a powder)
  2. Place walnuts,oats, and chia seeds into a seal-able container (I prefer using mason jars). Stir in milk, Greek yogurt, and maple syrup. Add a dash of cinnamon and stir until ingredients are well combined.
  3. Place container in the fridge overnight. In the morning, grab your oats for a great on-the-go breakfast, or if you have time sit down and enjoy! Also feel free to add walnuts, maple syrup, and/or fruit (such as blueberries or banana slices).

Notes

Nutrition facts (based on 1/2 cup unsweetened soy milk): 400 calories, 25 g fat, 35 g carbohydrate, 8 g fiber, 8 g sugar, 17 g protein.
