Polish junk, polish people like apparently

So I find myself in New Mexico. Turns out I have a Polish neighbor as I'm soon to find out. Typical weekend, there's not a whole lot to do in small town New Mexico, so me and my neighbor find ourselves hanging out watching movies, the rented kind or whatever.

I'm like "dude", we've been drinking a bit at this point mind you, "let me whip up some dinner". Dude is like "great!"

Sos, I bust out my mom's tried and true polish sausage thingy. It is as follows: 1 pound kielbasa or so, 2 red potatoes, one smallish onion, 2 cloves garlic, 1 jar sauerkraut, 1/8th a head of cabbage (or maybe 4 leaves or so). No need for methodology of any kind, just throw it all in a pot and let it stew for a while. Presto chango, you impress the hell out of drunk polish guys. Like, "where in the hell did you learn to cook polish food?" But seriously, good good stuff. Home made sauerkraut makes it even better, but that's a whole different ball game and somewhat touchy.

Anyhow, right. I can and get more technical on the thing, but if you want easy, don't. Very very forgiving recipe. Apples can be a thing. Spices like paprika or caraway seeds can be a thing. Chiles can be a thing. Polish people seem to become your best friends apparently, but maybe that's what happens when alcohol is involved. I still cook that nonsense to this day and always enjoy it. Thanks mom. Ha, cheers.

bon appetit
