Obviously going to cross-post this one with /r/slowcooking. My wife and I have been going crazy over this recipe for a few months now, and I think we've finally perfected it.

Planning
- 2 T vegetable oil, divided
- 3 lbs fresh lean pork butt, cut into 1.5 in cubes (easiest if boneless)
- (2) medium white onions, thinly sliced
- (5) medium cloves garlic, minced
- 1 t sea salt
- 1 t ground cumin
- 1 T chopped fresh oregano leaves (or substitute 0.75 t dried oregano)
- 1 c husked and chopped fresh tomatillos (about 5 medium tomatillos) (or substitute (1) 8 oz can tomatillos, drained and chopped)
- (1) 4 oz can chopped green chilies, drained
- 0.5 c chicken broth
- (2) medium-large tomatoes, coarsely chopped
- 0.5 c chopped fresh cilantro (or substitute 0.5 t ground coriander)
- 2 t lime juice
- 4 c cooked jasmine rice
- additional chopped fresh cilantro for garnish
Preparation
- Heat 1 T oil in large skillet over medium heat.
- Add pork, cook 10 minutes or until browned on all sides (can brown in two batches depending on skillet size).
- Remove pork (drained) to slow cooker.
- Heat remaining 1 T oil in skillet.
- Add onions, garlic, salt, cumin, and oregano.
- Stir and cook 2 minutes or until onions begin to soften.
Execution
- Add onion mixture to pork in slow cooker.
- Add remaining ingredients to slow cooker (tomatillos, tomatoes, green chilies, chicken broth, cilantro, and lime juice).
- Mix well.
- Cover and cook on LOW 5 hours (pork will be tender and barely pink in centers).
- Serve over rice and sprinkle with almonds and/or additional chopped fresh cilantro.
