Teen Cook: Looking for recipes for parents 20th anniversary (X-post on r/cooking)

I want to do something special for my parents this year and make them a multi-course meal at home for their 20th anniversary. I have never done something like this before and was wondering if anyone had any suggestions of amazing meals to make or how to know which courses go with what. I would really love to make great food that my parents would have to pay an insane amount of money for at a very nice restaurant. The only thing I already plan on making is a very nice mediterranean salad that my mom loves with grilled zucchini, pepper onions and toasted croutons with a lemon-dijon dressing. We learned how to make it in a cooking class and it is her favorite thing. I was planning on making this either the first or second course with dinner following and then dessert after that. The big things are that my parents don't eat pork, lamb or duck so it would strictly be beef, chicken or fish (I have never cooked fish before because I am allergic to finned fish. I can prepare it, I just cant eat it.) Any suggestions for recipes would be incredibly helpful as well as stories about you doing something like this yourselves. Thank you!
