Healthy Pad Thai Inspired Fried Rice!

This is a super quick and easy recipe for delicious fried rice that allows for much creativity. I used whatever veggies i had in my fridge and it turned out great!

Ingredients: 2 cups brown rice (cooked) 1tbsp peanut oil 1tbsp garlic 1 large egg 3 parts lime juice 1 part fish sauce 1 part sriracha 1 or 1.5 parts brown sugar 2 parts soy sauce 1 cup veggies (peppers, green onion, corn, zucchini. carrots, etc) (chopped)

Instructions: 1. Heat oil in a wok for 1 minute and then add garlic 2 Fry until aromatic and then add egg. Scramble egg until cooked through 3. Add veggies and allow to cook for about 2 minutes 4. Add rice and sauce and mix constantly for 3 minutes 5. Garnish with cilantro, lime wedges, or peanuts and serve!
