Thanksgiving Enchiladas?

The idea: Stuffing filled enchiladas with spicy cranberry sauce.

I have a pot luck coming up and I thought a twist on traditional sides would be fun, so i want to try and create stuffing enchiladas and top them with a spicy, maybe cream-based, cranberry sauce.

Has anyone made anything similar to this? I’m trying to figure out the best way to tackle it...or maybe ditch the idea for something more practical. Thoughts?
