Turkey Bolognese | Together&Twenty-Something

Working at an Italian restaurant, I couldn’t help but try every single item on the pasta menu. I mean I’m only human. I knew that I loved Italian food when I started working there. I had been to Italy and tried authentic cuisine, and every since, good Italian food has always been a staple in my life. As I worked my way through the menu I found my new favorite Italian dish, Rigatoni Bolognese.

I felt like this dish had been handed down to me from God himself by way of Alfonzo the amazing chef at the restaurant that I worked at. It combined all the best parts of Italian food–meaty, saucy, and cheesy. Once I started being more health conscious and watching what I ate I realized just how bad my favorite dish was for me and I set out to make one for myself that wasn’t so terrible. It may not be authentic and it doesn’t taste like Alfonzo’s but it’s pretty darn delicious.

Ingredients:

1 medium yellow onion diced

½ tablespoon extra virgin olive oil

1 lb ground turkey- buy this in the freshly ground packaging and not the fresh or frozen tube, the meat comes out with excess water and takes away from the delicious creaminess of the Bolognese sauce

1 cup 2% milk- real bolognese calls for cream but we’re cutting back here

1 cup part skim mozzarella cheese

Pasta sauce of your choice- the thicker the better

Italian spices

Salt and pepper to taste

Pasta of your choice

Directions:

Cook the onion with the oil in a large skillet pan until the onion becomes transparent. Add the ground turkey and cook it through on medium high heat until only a few pink parts remain. Add the seasonings and continue to cook it through, then drain. In a separate pot, cook the pasta according to the directions on the box, drain and set aside. In the pan with the the browned turkey, add the milk and sauce and bring to a simmer. Once the sauce, milk, and meat have combined, add the mozzarella and stir until you have a creamy,  cheesy,  saucy delicious mixture. Combine the sauce with the cooked noodles until it’s evenly dispersed.

And there you have it! Delicious, wannabe Italian food. All of the good parts of Italian food minus the excess fat and calories. I hope you enjoy!
