I notice this recipe hasn't been posted in a while, and I wanted to share because it has become a staple for me when trying to eat cheap and healthy, especially during this long, dreary, Canadian winter.
Hope you enjoy it as much as I do!
Ingredients
- 2 cups black beans, rinsed
- 2 cups whole kernel corn, rinsed
- 1/3 cup diced red onion
- 1/4 cup chopped cilantro
- 3 tbsp lime juice
- 1-2 tsp olive oil
- Salt & pepper to taste (about 1/2 tsp)
- 1 tsp cumin (I use 2 tsp 'cause I love it!)
- 1/8 tsp cayenne pepper
Method
- Combine beans, corn, onion in a large mixing bowl
- Add lime juice and oil to beans/corn; mix well
- In a small bowl, combine spices
- Add spices to beans/corn; mix well
- Lastly, add chopped cilantro; mix well.
- Store in airtight container in fridge 7-10 days. Mine gets eaten within the week!
Note: I find this "order of operations" works best to ensure even distribution of dressing and seasonings.
