How can I improve my jerk chicken?

Okay so I’ve tried loads of recipes and my favourite by far has the following ingredients in the marinade: peppercorns, whole allspice, nutmeg, cinnamon, scotch bonnets, soy sauce, lime juice, brown sugar, spring onions, fresh thyme & salt. But it’s not quite right. Great jerk seems to be a little sweeter/lighter as well spicy with deep flavours. This seems to be a bit too savoury if that makes sense, or a bit too deep! Have tried just upping the sugar but doesn’t really help. I’m missing something! What’s in your marinade?
