Recommendations for cheap + easy recipes for stressed student?
Hello! I’m a student with final exams coming up but I still want to try and eat relatively healthy as the stress and time pressure kicks in.

Cheesy Chicken on Rice -- Crock-Pot recipe
INGREDIENTS:

3lb bag Chicken Breasts
-
1/2 Cup of Butter
-
1 tbsp each of oregano, basil, and parsley
-
2 (10.5oz) Can Cream of Chicken Soup
-
1-2 (15.25oz) cans corn
-
2 (8 Oz) Pkg Cream Cheese
-
1tbsp red pepper flakes
-
2 (6.5oz) cans mushrooms
-
1 onion
-
1 teaspoon bacon drippings
-
1 cup shredded cheese
DIRECTIONS:

In a bowl soften butter and cream cheese, while sauteing red pepper flakes, onion, and mushrooms in bacon drippings.

Mix everything together with seasonings and corn.

Layer mixture with chicken breasts in Crock-Pot, making sure the chicken is covered.

Cook until chicken shreds easily, a few hours. Shred chicken and stir in a cup of shredded cheese, stirring till melted.
Note: If it seems too thick add a little milk.
- Serve over rice or pasta!

[Pie] Blackberry-Lemon-Lavender

Would love insight on my experiences making my most recent pie. Any process, novice, or even veteran mistakes please remind me.
I made a decent BlackBerry-Lemon-Lavender pie for the first time, using a gluten-free crust.
[ANY deviation or detail I can add are in square brackets]

- 45 minutes @ 375°f with a tinfoil tent
- [~+25 minutes waiting for the filling to bubble with the tinfoil tent removed]
- egg wash @ lattice top crust
- [sliced using a carving knife]
- [My freezer can hit as low as -9°f, and my fridge runs just shy of being a second freezer]

FOR THE FILLING:
- 5 cups Blackberries
- [frozen, thawed in the fridge overnight]
- Juice of ½ a large Lemon
- Zest of 1 Lemon
- 2-3 drops Lavender Oil
- [1 tsp ground dried edible lavender]
- 1 cup Turbinado or Demerara Sugar
- [White Sugar]
- 5 tablespoons Tapioca Starch
Filling result was 'ok'. It didn't leak or drip or even dribble, but was a bit too on the glue/gelatin end of mouth feel. The lemon could easily have been doubled, as could the lavender, as neither showed up in secondary or tertiary flavor roles, they were only background characters to not the best quality blackberries.
FOR THE CRUST:
- 4 cups (560 g) Shoestring's "Better Than Cup4Cup"
- [31% white rice flour]
- [18% cornstarch]
- [17% brown rice flour]
- [15% tapioca starch]
- [14% nonfat dry milk]
- [3% potato starch]
- [2% xanthan gum]
- [White rice flour used for dusting]
- 3/4 teaspoon baking powder
- 3/4 teaspoon kosher salt
- 16 tablespoons (224 g) unsalted butter, 1/2" diced and chilled
- 1 1/3 cups (8 to 10 2/3 fluid ounces) cold water, iced [stick to your skin cold whiskey stones]
Crust was surprisingly nice as this is gluten free, but doesnt feel like it's only 50% of the thing it's trying to be. Down side is that it was more "crispy" than "flaky". Even the base of the pie was crisp, not mealy or that closer to a soft sugar cookie but somewhere between dry and wet. It was crisp like trying to cut through a very caramelized apple turnover. Still tasted nice enough. A little light in salt & could have used a sprinkling of sugar over the top after the egg wash was applied to the top crust.

Tips for ice cream making?
I have a Chulux ice cream maker I’m going to use for the first time today. I was planning on making a vanilla ice cream and adding some crushed up leftover thin mint Girl Scout cookies. My question is, should I add the cookies to the liquid vanilla cream mixture before I add it to the ice cream maker? Or should I wait until the ice cream is done and then add the cookies? Also, I was planning on just winging the vanilla ice cream recipe part using whole milk, cream, sugar and vanilla extract. Is there anything else I need to add that will make a flavor or texture difference?

CAULIFLOWER WINGS
Yield: 2 – 3 servings
Prep time: 5 mins
Cooking time: 20 mins
Difficulty: Easy
INGREDIENTS
Cauliflower florets – 1 small cauliflower
Rice flour – 2 Tsp
Corn flour – 1 Tsp
Chilli powder – 1/2 Tsp
Coconut oil – 2 Tsp
Salt as per taste
METHOD
- Chop cauliflower florets into pieces and thoroughly wash them in hot salt water.
- Drain the water and pour the cauliflower florets in a pan and add salt to it.
- Now keep the pan on the stove with low flame to steam the florets. Steam them with lid closed for about 10 mins ( No need of adding water here. Any method of steaming will do)
- Once the florets turn soft, remove them from the stove.
- In a separate bowl, add 2 Tsp of rice flour , 1 Tsp of corn flour and 1/2 Tsp of chilli powder and mix them.
- Roll the florets in the dry flour mixture.
- Now pan fry the florets adding a Tsp of coconut oil or more oil as you please. Roast the florets for the desired crispness.
- Serve and enjoy.

Chicken Breast Casserole
INGREDIENTS: (for 2 people)
2 Chicken breasts (skinned and each cut into 4 pieces)
2 Large potatoes (cut into bitesize cubes)
3 Garlic cloves (sliced)
1 Green pepper (cut into bitesize pieces)
1 Glass of white wine
Olive oil
1⁄2 Tsp Yellow food colourant
1⁄2 Tsp Chicken seasoning powder
Salt (to your own liking)
INSTRUCTIONS:
1: Grab a large cooking pot and cover the base with olive oil. Heat up and add the garlic and green pepper. Fry until golden brown and the take them out and leave them on a plate to one side.
2: Add the chicken to the same cooking pot and fry until golden brown. Then add the garlic and green pepper, the yellow food colourant, chicken seasoning and salt. Add the wine and stir so everything is well mixed together. Gently boil for around 10 minutes until the wine has nearly all evaporated and you are left with a thickish sauce.
3: Grab a frying pan and fry the potatoes until they are golden brown and then add them to the pot of chicken. Mix well, cover with lid and leave aside for 5 minutes before serving.

Budget-friendly recipes for an entire week of meals (~$5/day)
Grocery List
- 14 eggs
- 3 Russet potatoes
- 7 tortillas (medium-sized)
- 6 chicken breasts
- 1 bell pepper
- 1 white onion
- 400g (2 cups) uncooked brown rice
- 1 head of cabbage
- 4 carrots
- 3 clementines
- 1 pineapple (or 3 mangoes, 1 cantaloupe)
- 500g ground pork
- Few pieces of green onion
- 50g black beans
- 50g corn
- 1 jalepeno (or cayenne powder)
- 2 tbsp brown sugar
- 1 head of broccoli
- 2 very ripe bananas
- 500g oatmeal
Seasonings and condiments aren’t listed, as most people have the basics on hand. And remember, let’s make the most of your budget by buying what is on a deal at your grocery store and substitute! For example, chicken thighs are usually noticeably cheaper than breasts.
Depending where you live, canned pineapple may be more cost-efficient.
Breakfast (all 7 days)
Simple Breakfast Burrito
What you’ll need: 14 eggs, 7 tortillas, 3 Russet potatoes
I’m a big fan of grab-and-go breakfasts. This one takes some time to prep, but at least you’ll be able to sleep in a little bit longer in the mornings.
Add diced potatoes to a pan with a little oil or butter and cook them until crispy over high heat. While this is cooking, start scrambling all the eggs. Feel free to season your potatoes and eggs how you like. When they are both finished cooking, fill a tortilla with some of each, roll it up into a burrito, then stash them away in the freezer.
Each morning, just pop one in the microwave for about 2-3 minutes, and head out the door! If you have time to sit, try it with some salsa or chipotle mayo.
Lunch (days 1-4)
Deconstructed Shish Kebabs
What you’ll need: 2 chicken breasts, 1 bell pepper, 1/2 onion, 200g brown rice (can substitute for quinoa, couscous, etc.)
Get started by cooking the brown rice. In saucepan, add the brown rice and double the amount of water. Bring it to a boil, then drop the heat to low. Let it simmer until all the water is absorbed. Brown rice tends to have a an ‘earthy’ flavor, add a little oil or butter and thyme to make it more tasty.
For the protein, dice the chicken into 1-inch cubes. Then cook this in a pan over medium-high heat. If you have a grill pan, it would be perfect. Season the chicken as you’d like; can’t go wrong with garlic salt and black pepper. While the chicken is cooking, dice the bell pepper and onion into 1-inch squares. Add them to the pan when the chicken is almost finished cooking, so they have a nice crunch still.
Divvy this up into four meals for the week.
Lunch (days 4-7)
Crunchy Citrus Chicken Salad
What you’ll need: 2 chicken breasts, 1/2 head of cabbage, 1 carrot, 3 clementines
Cook and shred the chicken breasts, and of course, season to your liking. Shred the cabbage and carrot, then mix them together.
Serve the shredded chicken on top of the veggie mixture, with pieces from a peeled clementine. Eat as-is or pair it with a little sesame ginger dressing or make a simple garlic soy sauce dressing.
Dinner (days 1-3)
Savory Pork Burgers
What you’ll need: 500g ground pork, 1/2 onion, 3 carrots, 4 pineapple slices, 1/2 head of cabbage, few pieces of green onion
In a bowl, mix diced onions, ground pork, salt, and pepper. If you have an Italian seasoning mixture, that would also pair well. Once mixed, form this into 3 patties. Place the patty in a cold pan with a bit of oil or butter, and cook it slowly over medium heat.
I recommend freezer the other two patties and cooking this dinner fresh each night, but you can also meal prep it if you prefer.
While this is cooking, cut your carrot into thick slices and boil them in water for about 7 minutes. Drain the water. Then from 1 pineapple slice, dice it up and toss with the carrots. This is optional, but you can then heat this over low heat for another 5 minutes to break down the pineapple.
When the pork patty is finished cooking, add a pineapple slice to the pan and cook it briefly (2 mins) over high heat.
Serve the pork patty over the pineapple slice, with the carrot mixture on top of a bed of shredded cabbage. Garnish the pork patty with chopped green onion.
Dinner (day 4)
Pineapple Black Bean Salad
What you’ll need: 50g brown rice, 50g black beans, 50g corn, 2 pineapple slices
Get started by cooking the brown rice. In saucepan, add the brown rice and double the amount of water. Bring it to a boil, then drop the heat to low. Let it simmer until all the water is absorbed. Brown rice tends to have a an ‘earthy’ flavor, add a little oil or butter and thyme to make it more tasty.
While this cooking, drain your black beans and corn and heat them up over medium-low heat. Season this to your liking. We recommend lime and cilantro, if you have something like that on hand. Otherwise, garlic salt and black pepper will do.
Dice up your pineapple slices. When the rice is finished cooking, combine everything into one big salad.
With the pineapple being exposed for 4 days at this point, we recommend dicing up the rest and storing it in the freezer. We’ll use these pieces for the last 3 dinners.
Dinner (days 5-7)
Pineapple Glazed Chicken
What you’ll need: 150g brown rice, 2 chicken breasts, remaining diced pineapple, 2 tbsp brown sugar, 1 jalepeno, 1 head of broccoli
Get started by cooking the brown rice. In saucepan, add the brown rice and double the amount of water. Bring it to a boil, then drop the heat to low. Let it simmer until all the water is absorbed. Brown rice tends to have a an ‘earthy’ flavor, add a little oil or butter and thyme to make it more tasty.
Dice up the chicken breasts and add to a pan with a little oil or butter over medium-high heat. If you want them a little crispy, coat them in flour before cooking. When the chicken is almost finished cooking, add the remaining diced pineapple, diced jalepeno, and 2 tbsp brown sugar.
Serve the pineapple chicken over rice, with steamed or boiled broccoli on the side.
Snacks
Banana Oatmeal Cookies
What you’ll need: 2 very ripe bananas, 350g oatmeal
Mash the bananas and mix them together with oatmeal. To this, you can add 1 tsp baking powder, cinnamon, chocolate chips, whatever you desire or what your budget allows.
Divide this into 7 cookies or 14 smaller ones and place them on a baking sheet. Bake this in the oven at 350F (180C) for 15 minutes. Flip them, then finish baking for another 5 minutes.
Once they're cool, you can store these in the freezer to keep for the entire week.
Disclaimer: I am not an expert. I’m just a broke girl in her mid-20’s who likes to cook and eat (what I consider) healthy. This meal plan simply works as a starting point. You can create the dishes exactly as they are, or you can alter them.
If you feel like you are lacking calories, budget-friendly fixes would be to double the carb intake (rice, potatoes, bread), eat more eggs, or add a peanut butter sandwich as an extra snack.

How do I find recipes that are authentic from around the world?
I really want to learn to cook things from all over. I love different flavors and trying different dishes. I'm vegetarian so I think I want to try Indian dishes but when I Google for them they're very americanized and not what I want. I've eaten vegetarian dishes at many Indian places and they're SO FLAVORFUL. I can handle a lot of spice and want to try to recreate some of the dishes and have them be nearly the same as the restaurants. If possible.
I don't want to only try Indian dishes but there seems to be a lot of flavorful and amazing meatless dishes.

Looking for another way to cook chicken
Hey guys! I'm on mobile, so forgive my poor formatting, lol.
My boyfriend and I eat a lot of chicken because he doesn't care much for steaks or pork (though I was able to use ground pork in an egg roll bowl I made this week; however, that is besides the point). As a result of constantly making chicken, I'm sort of running out of ideas as to what to make. Yes, my bf is picky, but I've been working away on that by sometimes cooking something I know I'll eat and letting him try it (and surprise, surprise he 8/10x he ends up liking it).
Since we've moved in together 9 months ago, I've made a couple chicken based stews with various seasonings on hand, curry with chicken katsu, lots of chicken tacos for taco Tuesdays, baked chicken, fried chicken, etc.
I'm totally open to all sorts of suggestions because I'm getting burnt out on the rotation we have. Hopefully y'all can help a girl out :)

Help make a recipe for type 1 diabetes
My brother is 7 years old he was diagnosed with type 1 diabetes week ago he will leave the hospital tomorrow. Chinese buffets baby clams?
So, I absolutely love those baby clams you can get at Chinese buffets. The one near me has this brown sauce with jalapenos along with it, and it has to be my favorite, but I have no idea how its made. Does anyone have a recipe that's like this?
