Accidentally discovered my favorite breakfast.

Digging through the fridge and came up with this.

Cook 1 cup jasmine rice.

Cut two Andouille sausage links lengthwise then slice into 1/4 in. thick half rounds. Cook them in a 10 inch pan.

When the Andouille is cooked to your liking, add however much of the rice you want and toss it with the Andouille to mix it together and to soak up all that greasy deliciousness. This also will make washing the pan easier.

After frying the rice in the Andouille drippins for a minute or two slide that mixture onto a plate.

Now cook two eggs over-easy in what’s left of the Andouille juice. Add a little oil if the rice soaked it all up. Never cook eggs in a dry pan unless you like shitty eggs.

When the whites are cooked but yokes are still runny as hell throw em on the pile of rice and Andouille.

Sprinkle generous amounts of Louisiana Hot Sauce or Sauce of your choice if you like.

Chop the eggs up and toss everything together so the runny yokes get distributed all over the place.

I paired mine with a Sugar-Free Rockstar Energy Drink, but you might like a cup of strong coffee or a Bloody Mary or a Rainier or whatever.
