Context: I posted on AITA earlier today about taking my signature brownies to a work potluck, and my inbox blew up with requests for the recipe! I'm posting the recipe here in case I missed anyone's request for it.
I'm bad at measuring things and tend to wing it when cooking, so don't take any numbers as gospel and my recipes are a confusing mess. When in doubt, trust your taste buds.
I use store bought mixes because I'm lazy but you can make the cookie dough and brownie batter from scratch if you have a favorite recipe. Follow the mix directions provided (if the brownie mix has two sets of directions, use the one that calls for more eggs).
You will need: 1 batch cookie dough (I use a plain chocolate chip mix), 1 batch brownie mix, one regular-sized box of instant pudding (any flavor you like, I use coconut), 1 teaspoon to 1 tablespoon instant coffee powder, 1-5 dashes cayenne pepper, an ungreased 13x9 inch or similar sized pan. For baking you'll use the brownie mix directions for temperature. Preheat the oven.
Spread all of the cookie dough in an even layer on the bottom of the pan. Make the brownie batter, then add the dry pudding mix. Stir in the dry coffee powder and cayenne pepper (taste test it, and be advised that the coffee bitterness and cayenne spiciness will diminish a little after baking so you might need more than you think).
The brownie batter will be crazy thick, that's what you want. Thick batter = fudgy brownies. Spread the batter on top of the raw cookie dough, then place in the preheated oven.
Set your timer for the brownie mix suggested time, but it could take 5-20 minutes longer. Test by poking a fork in the middle of the brownies. When it comes out clean, they're done!
Cool completely before devouring. The pudding mix is what makes these brownies super fudgy. If you cut into them while hot you'll think they're raw, but they're completely cooked once the fork comes out clean.
