How make the simmered jerk chicken recipes at Jamaican places in the US?

Frankly I don't think it's "authentic", but all of our Jamaican places serve these simmered chicken dishes - the chicken is fall off the bone, it really is more of a "stew" than grilled anything, and is served over rice.

I've tried numerous times to replicate it, but all of the jerk chicken recipes I've found are basically grilled and served. This isn't what I'm looking for. It's a VERY mild heat but strong jerk flavor, simmered with onions. It tastes almost like they grill it first and then simmer it maybe?
