Hey guys, so I want to make some Natto and have some dried soybeans. The first step is pretty clear as it only requires to wash and then soak the soybeans (overnight-24h). However the next steps are really confusing me, as every recipe does things very different. Some say you must only cook the soaked soybeans for 20 minutes, others go and do it for 9 hours. After that, you can use some frozen Natto you bought before, dissolve a bit with hot water, fish out the nattou and put the liquid over the cooked soybeans and let it ferment at 40°C for 20-24h.
If anybody has some clear instructions how to make natto (which is not poisonous haha) it would be great if you can share it with me.
