Hello I want to make a meaty umami vegan stew because I find vegetables boiled in vegetable stock bland in my opinion. The process of cooking the recipe is similar to a French beef-bourguignon in which the ingredients are seared then deg-lazed with a wine and stewed in an oven. Please note that the help that I need requires immense vegan chef knowledge or does it?
Umami Stock or Broth
A meaty umami vegan stock or broth similar to chicken or beef, I want to know if store bought mushroom broth would be good or making your own stock with umami ingredients would be better? I know there is a vegan demi-glace but that requires a ton of shaved vegetables for little stock.
Vegan Meat Substitute
There are three choices I can think of, mushrooms, tofu, or textured vegetable protein. Let me know if there are more, but I would think that mushrooms would work really well because they have umami properties and would flavor the stew in a long simmer.
Thickeners
I'm not going to ask what thickeners I should use, instead I'm going to recommend to use kosher gelatin which is vegan instead of flour. The reason why is because flour dulls the flavor of stocks or broth, but gelatin does not dilute the flavors and provides a nice coat to the tongue. This is similar to what fancy restaurants use when serving a stew made with veal stock which is rich in gelatin from the calves, but without the harm.
Umami
Normally tomato paste, cacao powder, and vegan soy sauce are good umami flavors, but there are two tricky to substitute ingredients which is Worcestershire sauce which contain fish products and anchovies. I know there is a vegan Worcestershire sauce, but what would be similar to anchovies? If there any other umami flavorings let me know.
Vegetables
Carrots, celery, potatoes, and peas are traditional for a stew, let me know if there are any others that would go in. Also I don't simmer my vegetables for long hours as that breaks down the nutrients in the stock or broth. I instead just bake them and add them at the end of the stew process until it boils then turn off the heat.
