How to use leftover egg yolks

So with this pandemic still being a thing and supermarket prices going up, it's better to not be wasteful right now. The other day I had donated some sweets to the hospital and had a bunch of egg yolks leftover, that then went bad because I put off doing research on how I could use them... Last night my mother made a dish that resulted in leftover egg yolks, which she almost threw out. I've been baking/cooking a lot/been looking around and have found some recipes that require egg yolks.

So if any of you have any recipes that require leftover egg yolks, either post them here or just say what you made with them, which we can do our own research on later :) (I'll list what ideas I have, and then link the videos in the comments once I find them).

Recipes that require leftover eggyolks:

-Japanese mayo (6 yolks)

-Vanilla/Chocolate pudding from scratch (2 yolks, per pudding)

-Egg wash for breads (just beat the yolks with 1tbsp of water and gently brush onto your bread dough before baking)

-Egg bagels (1-2 yolks)

-Hollandaise sauce (which is used on Croque Monsieur--a type of French ham and cheese sandwich) (4 yolks)

-Banana pudding (4 yolks)

-Creamy lemon curd (5 yolks)

-Alfajore cookies (cornstarch cookies) (2 yolks)

-Rice pudding (1 yolk)

-Canelés de Bordeaux (4 yolks)

-Pistachio thumbprint cookies (2 yolks)

-Cured egg yolk (can be grated onto pasta or even onto a sandwich to give creaminess to a dish) (4 yolks)

-Julia Child's Chocolate Mousse (4 yolks)

bon appetit
