Some day I'd love to see a focused little volume on just simple salads. And this codfish salad could go right to the top of that list.
Ingredients
5 ripe avocados
1 spring onion
2 lemons
5 coriander leaves
Salt and pepper
3.5 oz. codfish, per person
1 garlic bulb, per person
Oil
Lettuce leaves
Directions
For the guacamole, grind the avocados and the coriander leaves with salt and pepper, add the lemon juice and mix well, set aside in a refrigerator.
For codfish, add the oil and garlic bulb and seal it in a vacuum bag. Cook it in the SmartVide for 10 minutes at 65ºC.
Serve the cod on a plate with guacamole and lettuce leaves.
