Ingredients: 3 eggs in room temp. 60g granulated sugar 90g of all purpose flour. SIFTED! 1 tsp of vanilla extract. A 9 inch cake pan, lightly oiled and floured to prevent sticking.
Easiest method: Make sure your eggs are in room temperature so that it is easier to beat in. If you are in hurry, run them through hot sink water. Also preheat oven to 350F.
Whisk eggs so that they are thoroughly beaten, and add 1/3 of sugar. Whisk the egg VERY vigorously, and add another 1/3 of sugar. Do this once more and keep whisking until the egg/sugar is in cream state: it has to have ivory color, and when you drizzle the batter on the surface, the ribbon pattern should remain for about 2~4 seconds.
Next, using your spatula, add flours in 3 times; add your flour like you are "folding", meaning you have to scoop the batter from the bottom and "fold" it onto the top(this sounds kinda confusing I know). NEVER stir or whisk at this stage or all the air will deflate. Do this three times until flour is thoroughly incorporated.
Pour the batter into the pan, and tap the pan on hard surface twice. Then put it into the oven and bake for 20 minutes or until it's golden brown on the surface.
