This wonderful garlic and lime sauce that drapes all over the fish and zucchini is the one of those marvels that truly makes this dish sing.
Ingredients

4 Fresh halibut steaks (you can use another kind of fish if you like)

3-4 small fresh zuchini, cut into small pieces

Fresh lime juice and salt (about 2 Tbsp. + salt)

5 Tbsp. butter

5 Tbsp. olive oil

12-15 cloves garlic, peeled and thin cut

1/2 cup flour
-
2 Tbsp. more lime juice
-
Lime zest
-
Parlesy for finish and garnish
Directions
Cover the fish and zucchini lightly with lime juice and salt and refrigerate for about an hour.
Add the garlic to a steamer pan and cook so it has a a nice, but not quite too done texture. Set aside.
Add the butter and lime oil to the pan and fry the garlic strips until they are nicely brown (careful not to burn them, but you do want them brown). Remove the garlic to a serving bowl.
With heat set on medium, dredge each fish piece in a little flour and add it to the pan, cooking about 4-5 minutes per side or until done. Set aside in a warm oven.
Now add the zucchini and the garlic back to the pan, put in the additional lime juice, a little lime zest, some parsley and cook for just a couple of minutes more.
To plate, lay the zucchini on a plate, followed by the fish and then a nice layer of garlic sauce and more parsley on the top.
