want to try to make homemade sausages

Can anyone give me a sample recipe that comes out good and how to actually make the sausages so they dont fall apart in with the casing (this is my main concern)

also i can get hog casings in salt is this good or should i order a different casing?

ive never attempted it before so i want to try and expand my know hows
