$15 Meal Challenge

Hi there! Long time lurker, first time poster...

I have a list of ingredients I'd like to use to make a meal with. I am trying to teach my teenage sister how to cook on a budget, so we bought some fairly cheap items. They are -

  • Red Beans (not canned)
  • Eggs
  • Onions
  • Garlic
  • Kale
  • Sweet Potatoes
  • Yellow Corn
  • Jarred Beets (okay, they were on sale I couldn't help myself)
  • White Rice
  • Various cheeses (Gouda, Parm, Velveeta?? Who put that in the cart!)
  • Pasta (spaghetti & elbow mac)
  • Pasta Sauce

My question is - what are some recipes we can make using these items only? We do have basic seasonings and oil. Naturally, I could just whip up something basic like macaroni and cheese. But the purpose of this challenge is to demonstrate how to make several meals on a limited budget of ($15).

We were inspired to do this to prepare her for college. (When I was in school, I budgeted about $15 a week for groceries so I could spend the rest in booze haha)
