Works well with sweet potatoes, peppers, garlic, onion, zucchini, whatever you like. Just use the same amount of water you'd use for quinoa (2:1), maybe a little more, chop up the veges into bite size pieces, throw it all in, put a lid on for a bit until everythings soft, boil off any remaining water, add some olive oil, salt, pepper, beans, whatever you like, eat it up, throw the extra in a container for later, and clean up your knife, pot, and spoon. Shabam!
