Caribbean Chicken

4-6 Chicken Drumsticks

4-6 Chicken Thighs

2 Mangos, Cubed

2 Green Peppers, diced

2 Tomatoes, diced

1 Tsp. Freshly Grated Lime

Juice of one Lime

2 Cloves Garlic, minced

3 Green Onions, thinly sliced (with tops)

1/2 Cup Cilantro, chopped

1/4 Cup Olive Oil

1 Tsp. Black Pepper

1 Tsp. Paprika

1 Tsp. Dried Oregano

1/2 Tsp. Garlic Powder

Heat oven to 400 degrees. In large baking pan, spread 1/4 cup olive oil. Arrange chicken pieces and season with pepper, paprika, oregano, and garlic powder.

Bake for 45-50 minutes until chicken is nicely browned

Meanwhile, slice and dice the mangos: Here is an easy way to cut a mango into nice, even pieces. Place the mango stem side down on a cutting board. About 1/4 inch off center, slice through vertically. Repeat on the other side. With a sharp knife, cut even slices, making sure not to cut through the skin. Turn and repeat, creating a checkerboard pattern. Push skin inside out and with a spoon or knife remove the mango pieces. Not only do mangos taste sooooo good and sweet (one of my favorite fruits!) but they are low in calories and contain many different vitamins and minerals! Really good for you!

Wash and dice the green peppers and tomatoes:

Slice the onions; finely mince the garlic and chop the cilantro finely.

Grate one tsp. lime peel.

Mix all of the above together in a large bowl. Squeeze the lime juice over.

Remove chicken from oven and drain excess fat. Spoon the mango mixture over and around the chicken.

Reduce heat to 325 degrees. Cover chicken and bake for an additional 30 minutes longer.
