So it seems that once a week, most weeks, I'll be cooking for myself and 3 others. One person is vegetarian. Also, for various reasons, anything meaty would preferably be chicken, turkey or pork. And would be something where it's easy to make a vegetarian portion of. But the meat eaters are happy with a vegetarian meal sometimes. The 3 meat eaters don't like very spicy foods. I also only live near a tesco metro, pound stretcher, Asian food shop, and green grocers (I live in the UK). I can't easily get to an actual supermarket. But I can get hold of quorn mince and quorn 'chicken' which the meat eaters would eat. Although one guest does go past an asda to get to mine.
One idea was to have a bit of a mexican/texmex feast. Fry up some chicken/pork with some veg, make another pan of stir fried veg, maybe make up some refried beans, and serve with rice and/or tortillas with grated cheese and sauces. That way meat eaters can have some meat and the vegetarian can have the other things.
Another idea was Indian food. Tomorrow I'm making a mild chicken curry, veg/chickpea curry, daal and rice.
I don't have a slow cooker. And would prefer if I could do all the prep and cooking within 90 mins. 2 hours is the limit as I work Tuesdays but my boyfriend goes out at about 7.30pm and needs to have dinner before leaving.
Any other ideas?
