My wife made these high energy healthy snacks, that can easily be made and is a nice addition to any kids lunchbox.
Recipe: * 250 gr pitted dates chopped fine * 2 tablespoons butter * 1 cup desiccated coconut * 1 cup rolled oats * 4 tablespoons natural peanut butter * 1/2 cup chopped mixed nuts * 5 ml vanilla essence * extra coconut for rolling * 180 gr white chocolate slab * white chocolate disks for garnish
