Vodka sauce is maybe the best quick-fix pasta dish you can make. It's a real treat and it can be ready in just a few minutes.
Ingredients

2 Tbsp. Butter

1 Onion, sliced fine

3-4 cloves garlic, sliced fine

1 cup vodka
-
Salt and Pepper
-
1 15 oz. ounce can (or home made) tomato puree

1 cup cream
-
Red cracked pepper
-
1/2 cup Parmesan cheese
-
Pasta (penne and buccotini or my favorites)
-
Basil and more Parmesan for garnish
Directions
Melt butter and when the froth dies down, saute the onions and garlic for about 2-3 minutes.
Add the vodka and allow to simmer for about 5 minutes, or so.
Then add the tomato puree, cream, a little red cracked pepper, salt and a little black pepper and allow to simmer for about 20 minutes or perhaps a little more.
Add the Parmesan to the mix and serve over pasta, garnished with some fresh basil and more cheese.
