Ingredients:
2 apples, peeled, seeded and chopped 2 carrots, peeled and chopped 1 leek, use stem and cut into chunks 1 small jicama, peeled and sliced into strips 1 medium daikon, peeled and sliced into strips water
Directions:
To reduce cooking time, cut the vegetables into small pieces. Place all vegetables in a stockpot and fill up with water. Bring water to a boil, then simmer over low-medium heat for about an hour. Cover and remove from heat. For more flavor, leave the vegetables in broth overnight. Filter broth into containers and store in the freezer.
